01 - Bring a large pot of salted water to a boil. Add dried lasagna noodles and cook until al dente, about 6 to 7 minutes. Drain and rinse noodles under cold water to halt cooking. Pat noodles dry with paper towels.
02 - Cut each noodle crosswise into 2-inch wide strips, then slice each strip diagonally to form triangles or rectangles.
03 - In a small mixing bowl, stir together grated Parmesan, Italian seasoning, garlic powder, salt, and black pepper until evenly blended.
04 - Pour vegetable oil into a deep skillet or frying pot and heat to 350°F. Maintain temperature throughout frying process.
05 - Working in batches, carefully add noodle pieces to hot oil and fry for 2 to 3 minutes, turning once, until crisp and golden. Remove with slotted spoon and set on paper towels to drain.
06 - While chips are still warm, sprinkle evenly with Parmesan-herb mixture.
07 - Serve lasagna chips immediately, accompanied by marinara sauce for dipping. Garnish with extra Parmesan cheese and fresh parsley if desired.
