01 - In a large mixing bowl, add the Greek yogurt, fresh lemon juice, lemon zest, honey, vanilla extract, and a pinch of sea salt. Whisk until the mixture is completely smooth and well incorporated.
02 - Gently fold in any optional ingredients such as chopped fresh mint or mini white chocolate chips, distributing them evenly throughout the mixture.
03 - Pour the mixture evenly into popsicle molds, tapping the molds lightly on the counter to release any trapped air bubbles. Insert popsicle sticks into the center of each mold.
04 - Place the filled molds in the freezer and freeze for at least 4 hours, or until the popsicles are completely firm and set.
05 - To release the popsicles, briefly run the outside of each mold under warm water for a few seconds, then gently pull the popsicle out. Serve immediately.
